Banana Protein Pancakes


Ingredients

Makes 5 Pancakes

1/3 cup (approx 40g) oat flour/ground oats
1 scoop of vanilla or unflavoured whey protein
1/4 cup milk (skimmed, almond etc)
1/2 teaspoon baking powder
1 banana (mashed)
1 egg white
1 teaspoon vanilla extract
2 teaspoons sweetener

1. Mix together all dry ingredients.

2. Mix together all wet ingredients.

3. Combine wet ingredients into the dry mix and stir until there are no longer any clumps.

4. Let mixture sit for 5 mins to thicken.

5. Spray a medium pan with non-stick spray or use coconut oil.

5. Over low-medium heat add each pancake one or two at a time. Let cook for 2-4 mins on each side. Be patient but watch carefully.

6. Top with honey, syrup, nut butter etc, I used a tablespoon of raspberry purée and a tablespoon of honey mixed together. This will alter the macros below.

For all five; 374 calories | 5g fat | 0.5g sat fat | 56.8g carbs | 28g protein.
